they're just trash, they're trying to charge $2K for us to keep our pets here.
according to them, they weren't aware we had more than 1 pet, which is false, when we were initially moving in, my parents openly told them we had 3 at the time, now they're claiming they didn't know shit.
also, literally as I was typing this, my dad has told me they're now charging him $1K for me to keep my fucking cats... how fun. fuck them.

I'm not a lawyer/solicitor, but I'd say that sounds like a combination of two things:
- Trying to milk you for $2K and
- trying to kick you out in record time - so they can pull that stunt on somebody else while making bullshit claims to they have an excuse to keep the deposit.
You should get out of there in either case. A landlord who does something like that might also enter your "home" while you're at work/school to take money and valuables you won't immediately notice missing. Consider moving such things to your parent's place.
Also consider temporarily moving the cats there and then claim you never had more that one cat here. Without hard evidence for either claim, it's their word against yours.
Other than that: Make photos of every room, to document the state you left them in before you move out.
There are probably professional guides for all that online. This is just what immediately came to mind for me.
